If that was my aim i would use plywood as my core and apply veneer to both sides.

Veneer is the top 1 32 to 1 4 layer of real wood that is glued over a layer of hardwood plywood cores or mdf hdf cores.
Logs have to meet specific criteria in order to be utilized in veneer due to how the veneer flitches are skinned off the log etc.
